Easy Weeknight Recipes

As much as I love to cook, during the week it is hard to find time to cook. Last week I set out on a mission to find quick recipes that were healthier than the frozen pizza that were the usual go to dinner. I found two recipes that were so easy and didn’t require that many dishes either!

The first recipe was Sweet Chicken, which I forgot to take a photo of, but was very easy. The combination of ingredients involved made me nauseous and the smell was definitely an interesting  smell but after putting it in the oven I was able to get that out of my head. Gabe didn’t see me make the sauce so I let her be the first judge of how it tasted before I told her what was in it. She really enjoyed it. When I asked her to guess what was in it, it took a while but she wasn’t grossed out when I gave her the correct answer.

The second recipe I remembered to take a picture of and it was Bruschetta Chicken! I kind of messed up which chicken went with which recipes and used the chicken breast for the Sweet Chicken, so I had to use chicken tenders for the Bruschetta Chicken. I didn’t really know how long to bake the tenders for and I think I cooked them a little too long because they were kind of tuff, but they were still good. Here are the recipes for the Bruschetta Chicken and the one I used to bake the chicken. (I’m new at this cooking thing and didn’t want to screw it up 😉 )
